Molten Chocolate Cake
Prepare four ramekins with nonstick cooking spray and lightly flour. Set aside. Melt butter and chocolate together. Set aside. Whisk eggs and egg yolks with sugar vigorously. Add chocolate mixture and continue to whist. Whisk in the flour quickly. Pour into the prepared ramekins. At this point, refrigerate until ready to bake and eat. Return ramekins to room temperature and bake just before serving dessert in a 450F oven for 6-7 minutes. Center should wiggle. Turn upside down onto a small serving plate. Some of the chocolate will run just like a volcano. Serve with a sprig of fresh mint.
